Vineyard

Soil : Clay and limestone Selection : A rigorous selection from long-standing partner growers. Maturity monitoring by the estate's oenologist to determine the optimal harvest date. Grapes are harvested from late August to mid-September.

Vinification

Gentle pressing of the berries to preserve the fruit's aromas. Cold stabilization in temperature-controlled stainless steel tanks, varietal by varietal, with musts cooled to 0°C for 10 days to enhance the aromas. Fermentation temperatures are maintained at 16-17°C throughout the process, which lasts between 10 and 15 days.
