Vinification

Harvest conducted by a carpet, thus avoiding the alteration of berries, then carefully sorted and destemmed. Gently pressed berries thus avoiding oxidation. Stabling the must at 0° for 20 days, brewing 3 times a day to ensure that this wine is soft on the palate. Fermentation of the juices for 100% in wooden vats of 18 hl to give this wine a great complexity. Controlled temperatures throughout the alcoholic fermentation, to optimize the aromatic expression. Ageing on lees in wooden vats with regular batting until bottling.
