Vineyard
The grapes were sourced, and hand harvested from bushvines in the Agter- Paarl area. Soil consists of decomposed granite which perserves the wine’s natural acidity and aging potential. This block does not have irrigation and relies solely on winter rainfall.
Vinification
Harvested early morning in the beginning of February, the grapes for this wine followed in the process of destemming and juice extraction with no skin contact given. Great care was taken to ensure only clear, free run juice was used for fermentation. The wine was aged on the lees for three months to ensure complexity and improve the palate.
Maturation
Ready to be enjoyed now with the potential to age for further three years
Food Pairing
This wine will pair well with most fish and poultry dishes and is an ideal match for spicy curry. Best served chilled.
