Vinification
The grapes are picked by hand in the early morning. Grapes are de-stemmed and skin contact is given for 2 days to extract colour and flavours. Fermentation takes place in stainless steel tanks with the addition of Organic certified yeast, and with regular pump overs during the process. After fermentation the wine is racked o the skins, and malolactic fermentation is done in tanks. After malolactic fermentations the wine is centrifuged and stored in stainless steel tanks with wooden staves for 6-8 months.
