Description
This refreshing wine displays aromas of peach, white pear, pineapple with nuances of citrus blossom and grapefruit. The palate is fresh, elegant but yet layered, with hints of lime and a well-rounded finish.

Vinification
The grapes were picked at optimum ripeness in the cool of the morning. Crushing was slow and gentle followed by a gentle pressing. This was followed by 2 hours skin contact to extract maksimum fruit flavours and a gentle pressing. The juice was settled overnight and racked to the fermentation tanks. Specific yeast was selected for each fermentation batch to ensure maximum flavour development. Fermentation was done in a combination of 60% stainless steel tanks and 40% french oak staves. Fermentation was maintained at 13 to 14°C to preserve freshness and fruit flavours. The 40% oak portion was left to mature for 4 months. No malolactic fermentation was allowed to ensure optmimum freshness and fruit .
Maturation
A 40% portion of the wine was matured in oak for four months.

Enjoy this wine on its own, with seafood, various white meat dishes, sushi or a variety of cheeses. It is best served chilled.
