Description
This layered Sauvignon blanc shows prominent aromas of passionfruit, cut grass and peppers. The flavours on the nose follows through on the palate and the palate is fresh, zesty, well balanced with a linear acidity and fruity finish.

Vinification
The main focus for the entire winemaking process is to retain maximum fruit flavour. Sauv blanc grapes are only harvested in the morning to ensure the grapes are cooled down. Crushing is slow and gentle followed by gentle pressing. Only the highest quality free run juice is used from the press and settled in 24 hours. Specific yeast was selected for each fermentation batch to ensure maximum flavour development. Fermentation was done in stainless steel tanks at 12 to 13°C to preserve freshness and fruit flavours. No malolactic fermentation was allowed to ensure optmimum freshness and fruit.

Enjoy this wine on its own or with a variety of salads, white meat dishes and fresh seafood. Sauvignon blanc is generally best enjoyed when it is chilled.
