Vinification
Hand harvested then gently whole bunch pressed. Racked to old French oak puncheons for fermentation with natural and cultured yeasts. Malolactic fermentation occurred once spring weather arrived. Individual barrel assessment with only the best deemed suitable for the final blend.
Maturation
post-fermentation, each barrel underwent twice weekly batonage (yeast stirring) • malo-lactic fermentation occurred once the weather warmed in the spring • individual barrel assessment, with only the best deemed exceptional enough to make the final blend
