Description

A beautiful ruby colour with a light terracotta rim. Intsense and complex aromas, reminiscent of black fruits such as plums and blackberries are combined with tertiary notes developed through age and a very evocative range of spices from the new French oak. In the mouth it is well balanced, profund in the depth, elegant and with freshness, with a sensationally long, pleasurable finish.

Viticulture

Method of picking: Hand harvested in small 15kg crates. Selection of grapes and berries from old vines with a low production per hectare: average yield 4,000kg/ha. The fruit, selected bunch by bunch in the vineyard, goes along a selection table on arrival at the winery. The unique characteristics of the grapes used, as well as all the very exacting care that is taken, mean that this wine is only produced in limited quantities, depending on the years, and therefore, it is an exclusive wine.

Vinification

Alcoholic fermentation: De-stemmed, crushed grapes. Long macerations of 28, 32 days in stainless steel tanks with the cap submerged, to extract all the primary fruit aromas of the varietal, as well as the maximum colour. Gentle pumping over to maximise the extraction of polyphenolic compounds. Malolactic fermentation takes place in French oak barrels, adding hints of spices and a smoother, more appealing character. Aged for 20 months in 225-litre new French oak barrels. New, lightly toasted, hand-cleft barrels are used, from different French cooperages to acheive greater aromatic complexity. The wine remains in bottle for at least 18 months.
