Vinification
Harvesting: Garnacha Tinta is harvested in early September, Taladro in mid-September, and Pinot Noir at the beginning of the same month.
Maturation
Fermentation: The rosé wine is dealcoholized through vacuum distillation at low temperatures using spinning cone columns. Concentrated rectified grape must is then added, followed by pasteurization, carbonation, and isobaric bottling.
