Description
Dona Paula use only estate grown grapes, cultivated at high altitudes where the cooler temperatures allow the grapes to ripen slowly, developing complex and intense flavours. This riesling is complex - pale yellow in colour, with expressive aromas of jasmine and white flowers, coupled with citrus notes. The wine is fresh and mineral, with good acidity. Its complex and delicate character makes it a great example of the potential of Riesling from this region.

Vinification
The grapes are hand-picked during the day time, the first week of March. A very careful, protective destemming and pressing process is carried out.
Maturation
Fermentation takes place at low temperatures, between 12 and 15 °C (53.6 – 59 °F), in stainless steel tanks, to preserve the primary aromas.
Food Pairing
Fish and shellfish, fatty meats, vegetables with natural sweetness (red onion, pumpkin, eggplant). It complements very well salty dishes such as ham, sausage, longaniza, and also dishes with sweet or sweet and sour sauces.
