Description
Dona Paula's Altitude Series (so named to demonstrate the high altitude of each vineyard) showcases this leading Argentian producer's capabilities, using 100% estate grown grapes to create complex blends. This complex and balanced wine of a deep violet color is a blend of Cabernet Franc (50%), Malbec (45%) and Casavecchia (5%). The Cabernet Franc variety contributes very spicy and floral notes, whereas the Malbec gives the wine aromas of red fruit. In the mouth, it has a long and highly persistent finish due to its tannins. A very elegant and well-structured blend.

Vinification
The harvest starts with Malbec and Casavecchia by mid-April, and it finishes with Cabernet Franc at the end of the same month. The grapes are hand-picked and then they are destemmed gently, without breaking the berries. Each variety undergoes cold maceration separately, in stainless steel tanks, to extract the primary aromas.
Maturation
Once the alcoholic fermentation is complete, the blend is made, and the aging process is carried out in 20% new French oak barrels, for 16 months.
Food Pairing
This wine pairs well with lean roast meats, beef or game. Roasted vegetables are ideal: aubergine, garlic, chili or tomato, green and red peppers. It is also the ideal accompaniment for pasta with tomato sauce, pizzas, lasagna, grilled meats and dishes with poultry, duck or lamb. If we talk about cheese, it is ideal to accompany blue cheese, Swiss cheese, gorgonzola, brie.
