Vinification
Destemming, pneumatic pressing. Settling at low temperature (8-10°). The wine begins its fermentation in vats and is then barrelled into oak barrels to spend 4 months at 18-20°C. Malolactic fermentation for 30% of the wine.
Maturation
Ageing: It is then transferred to stainless steel vats where it will be matured for another month before bottling.
Food Pairing
To be served at 9-12°C, withThai monkfish curry, turbot fillets with saffron sauce, or white meats, Orloff veal fillet. For Viognier lovers, enjoy it on its own.
