Grand Vin de Stellenbosch Cabernet Sauvignon 2020

A classic example of exquisite Stellenbosch Cabernet Sauvignon fruit. The wine displays a dense opaque colour. The bouquet is filled with alluring notes of black currant and perfumed violets. A dense palate which is packed with svelte tannins that are beautifully balanced by the cassis and blackberry fruit notes which linger seductively on the back palate. A seamless integration of oak spice and oak tannin entwined with the Cabernet’s masculinity adds real depth and complexity to the wine.

Grapes were crushed, destemmed and cold soaked for two days prior to inoculation. Fermentation peaked at 28°C. With regular and controlled pump overs sufficient colour and tannin structure were extracted. After extended maceration, the skins were gently pressed. Malolactic fermentation took place in barrel and tank.

14 Months in 100% French oak. 44% first fill and 56% second fill
