Description
COLOUR: Highlighter red AROMA: Like Mary Poppins bag in a lolly shoppe on the coast of Cornwall, childhood favourites keep popping out of this wine. Redskins, fairy floss, jubes, it just keeps coming. All the while you are kept intrigued by the underlying white and Szechuan pepper mix. PALATE: What you smell is what you get here as the nose perfectly integrates into the palate. Bright and exhilarating like riding a bike downhill with no hands for the first time, slowing to a crawl on soft green grass and the bottom of the descent. Smooth, just like the finish of this mouth-watering wine.

Viticulture
Thomas Block is located at the bottom of the McLaren Valley (approx 75-80m) on deep alluvial soils is one of the coolest sites in the McLaren Vale Region. The site is flat ground and bordered by ancient River Red Gums. The single cordon trellis is hand spur pruned. Shoot, bunch and leaf thinning is employed when required and Viticulture practices are fully certified organic and biodynamic.
Vinification
Selector harvested at optimum sugar and flavour balance. The whole berries were tipped into an open fermenter. Cool ferment temperatures and gentle hand-plunging helped capture the character of the vineyard and allowed the fermentation to continue for 21 days.
Maturation
When fermentation was complete, the grapes were pressed to used French oak puncheons for 7 months prior to blending and bottling.
