Paxton Single Vineyard Jones Block Shiraz 2021

Deep crimson red with purple hues, an intense savoury nutmeg lift, with notes of cinnamon and cracked black pepper notes supporting ripe mulberries and stewed plums. Full bodied wine with bright layers of primary fruit blended with delicious, luxurious and exquisite oak. Richness, depth and concentrated fruit flavour with notes of plums and blackcurrant give this wine amazing length and power.

Jones Block - (Shiraz) located on a ridge to the North of the McLaren Vale township. Soil Types vary from shallow red sandy loam over limestone to Sand over clay. Aspects are both east and west facing. Elevation: 97-108m Shoot, bunch and leaf thinning is employed when required and Viticulture practices are fully certified organic and biodynamic.

Hand picked at optimum sugar and flavour equilibrium, the grapes were kept on skins for 15 days. The ferment was pumped over and plunged twice a day to extract colour, flavour and tannin structure.

We used French oak barriques (40% new) for maturation of up to 20 months prior to blending and bottling. This wine was cellared for a further 6 months prior to release.
