Viticulture
Good rains during winter and early spring allowed for good fruitfulness and healthy vines at the beginning of the growing season. A cooler than usual ripening period enabled good varietal flavours. Rain during late spring and summer increased the disease pressure but with good viticultural practices and selective harvesting we were able to begin vintage albeit about 2 weeks later than what has become the norm in recent times.
Vinification
This wine was fermented cool over a two week period. Selected parcels were fermented with the inclusion of our house select fine French oak. Once fermentation was complete the wines were matured on fine yeast lees over 7 months to build palate weight.
Maturation

These more full bodied styles match well with: Creamy Pasta - white wine and cream sauces; mushroom risotto. Chicken - grilled chicken; chicken caesar salad. Hard Cheeses - parmesan; roumano; vintage gouda.
