Viticulture
After a dry winter, the vines received a boost from rains in late spring and early summer, resulting in average yields for the white varieties. We started the harvest on January 21st. The lower crop levels allowed the fruit to ripen quickly and cleanly.
Vinification
This wine was fermented cool over a two week period. Selected parcels were fermented with the inclusion of our house select fine French oak. Once fermentation was complete the wines were matured on fine yeast lees over 7 months to build palate weight.
Maturation
Once fermentation was complete the wines were matured on fine yeast lees over 7 months to build palate weight.

These more full bodied styles match well with: Andouillette, chaource, terrines, or escargot.
