Description
The Deen Vat range is a tribute to Deen De Bortoli, a true visionary in the Australian wine industry, whose mission was to create quality wine for everyone to enjoy. Deep red colour with a bright purple edge. The nose reveals Cabernet florals of ripe blueberry, plum and hint of cedar-wood. The palate follows with more of the same generous dark fruits and ripe supple tannins. Volumes of flavour, rich and generous.

Fruit is harvested in the cool of the night to achieve a balance of fruit freshness, structure and ripeness.
Vinification
Fruit is harvested in the cool of the night to achieve a balance of fruit freshness, structure and ripeness. Upon reception at the winery, the fruit was carefully destemmed into our Potter fermenters, where fermentation took place over a 7-8 day period. Pressed off at dryness, the wine was matured in new and older American and French Hogshead barrels for 12 months, whilst 20% was left unoaked to keep fresh and fruitful to blend with the barrel matured portions.
