Viticulture
The Mourvedre and Grenache fruit is grown on the De Bortoli Shelley’s Vineyard on the eastern edge of the Rutherglen region. The Shiraz comes from our Burgoyne’s Block on a west facing slope which helps to concentrate the Shiraz varietal flavours. Both sites have an interesting gravel, clay and alluvial soil mix with different aspects, which helps generate a distinct flavour profile.
Vinification
Each variety was made separately before combining to achieve this seamless blend. The Grenache and Mourvèdre fruit were fermented in small fermenters with a gentle pump over regime to keep a bright and vibrant fruit profile. The Shiraz portion was selected from a soft generous Shiraz parcel to help balance the fruit driven Grenache and structured Mourvèdre. The Shiraz wine was aged in older French oak to give tightness and roundness on the palate whilst helping to soften the tannins, finishing with an expressive approachable wine.
