Viticulture
The porous nature of limestone allows vine roots to penetrate deeply, essential for maintaining vine health and grape quality. This terroir imparts a notable minerality to the wine, enhancing its complexity and freshness.
Vinification
The grapes are pressed gently and the juice cold fermented with selected yeasts at 16-18°C in stainless steel tanks. No malolactic fermentation or oak.
Maturation
Held in stainless steel which is 'neutral' and allows the wine to retain its structure and flavour.
Food Pairing
Fruity enough to enjoy without food but also makes a superb partner with a plate of goat's cheese and crusty bread, a platter of sushi or a bowl of Thai chicken curry.
