Vinification
The entire grapes are introduced into the pneumatic press and the must obtained from their soft pressing, after a first racking, is placed in the tanks at a controlled temperature where it remains until its use for the production of sparkling wine.
Maturation
The must, added of selected yeasts, is placed in thermoconditioned containers where fermentation takes place at a controlled temperature of 15-16 ° C; in this way all the perfumes of the harvest are intensified. Reached the desired alcohol and sugar content, fermentation is blocked by refrigeration and after a short interval the sparkling wine is ready for bottling.
