Description
The philosophy at De Bortoli is that great wines begin in the vineyard. With a vision for a future where great wine and a healthy environment can be enjoyed by everyone, De Bortoli has released its first Organic Shiraz.
The grapes are grown at the Hemley vineyard in Riverina and produced in a way to preserve the purity of the variety.
Bright crimson in the glass, this Shiraz offers enticing aromas of red fruits and white pepper. The palate exudes rich red fruits and blackberry notes. It has a full and generous structure with refined tannins and a lengthy finish.

Viticulture
Cool and mild season with timely rain. Ripened later than normal with good flavour.
Vinification
Vineyards are carefully monitored to be able to harvest the fruit at optimum flavour ripeness and balanced acidity. Harvest is carried out in the cool of the morning. Fruit is then carefully destemmed and fermented at 23-27°C over 7-8 days. Pressed, racked and matured in stainless steel tank to retain those lovely fruits with a small portion aged in new and older Hogshead barrels for around 7 months.
