Description
This is an elegant, layered Sauvignon Blanc, reminiscent of a dry white Bordeaux. A sophisticated, rich wine with layers of citrus, straw and minerality, herbal notes and a hint of creamy vanilla.

Viticulture
The Sauvignon Blanc grapes came from the beautiful Vaalvlei vineyard in Stanford, which is close to the ocean and has decomposed granite soil. The Semillon is from Robert Stanford vineyard.
Vinification
The grapes for this wine were hand-picked, hand-sorted and whole-bunch pressed. Fermented in large French oak barrels and an ‘egg’ using wild yeast only. The wine also went through malolactic conversion.
Total production 3,400 bottles.
Maturation
The wine is delicious to drink now but will continue to develop over a few years.
