Good rains during winter and early spring allowed for good fruitfulness and healthy vines at the beginning of the growing season. A cooler than usual ripening period enabled good varietal flavours. Rain during late spring and summer increased the disease pressure but with good viticultural practices and selective harvesting we were able to begin vintage albeit about 2 weeks later than what has become the norm in recent times.

To secure the desired colour tone the juice is hyper-oxidized prior to alcoholic fermentation which help remove the bronze/copper colour of Grigio. Part of it is fermented in 16, 17 and 19 years old French barrels whereas the rest is inoculated with a selected strain of yeast in controlled temperature stainless steel tanks. The wine is then kept on fine lees for 3 months to help intensify the flavours and add texture to the palate.

These lighter style whites have a touch of zest and herbaceous characters, they match well with: Cooked Seafood - seafood pastas and salads; grilled prawns; fish and chips; scallops Vegetables - roast pumpkin with goats cheese; stuffed capsicum; vegetarian pastas
