Description
It has an intense ruby-red color with violet hues. The aromas reveal blackberries, blueberries, plums with herbal undertones, and hints of graphite, with a subtle note of jasmine. On the palate, it is well-integrated, flavorful with good character, and a juicy texture. The persistent round tannins accompany the finish. It can be enjoyed immediately or aged for a few years due to its potential and characteristics that allow it to mature in the bottle and develop appropriately.

For this Petit, we chose to separate the vegetal parts of the grape and fermented it with selected yeast. We performed few pump-overs and delestages to moisten the grape cap. Once the alcoholic fermentation was completed, it was racked into a large oak foudre to undergo malolactic fermentation. After aging, the wine was lightly filtered with a 20-micron filter before being bottled and aged for 6 months prior to release.
